Did you know that Chia is an incredible source of Omega 3 and 6! Chia seeds also are a great source of fibre and make an amazing thickening agent. These are some of the reasons that chia seeds are the star of this Vegan and Gluten-Free Chocolate Mousse!
Chocolate Mousse is traditionally made using lots of dairy (cream) and lots of sugar (spikes your blood sugar). My chocolate mousse is ridiculously easy and unbelievable delicious. You won’t even notice the lack of sugar or dairy. Serve your friends and family this mousse and let me know if they can tell if it’s vegan and refined-sugar free!
Chocolate Mousse Recipe (makes 1.5 cups)
Ingredients
1/3 Cup Chia Seeds
1/4 Cup Raw Cacao Powder
5 Dates
1 Cup Non-Dairy Milk
1 TSP Vanilla
1/4 TSP Himalayan Salt
Optional Boosters
1 TSP Cinnamon
2 TSP Maca Powder
Toppings
Non-Dairy Yogurt (Coconut or Almond)
Fresh Berries
Nut Butter
Whipped Coconut Cream
Instructions
Soak dates in boiling water for 30-60 minutes. Drain dates and place in a high speed blender with chia seeds, milk, cacao powder, vanilla, and salt and optional boosters. Blend until smooth. If the mixture is too thick, add 1/4 cup more milk. The mixture should be thick but able to easily be poured, think pureed tomato sauce.
Pour mixture into individual ramekins, small bowls or one medium-sized bowl.
Refrigerate for at least 4 hours or as long as possible overnight is best.
Top your Mousse with your choice of toppings. Enjoy!
