Feta and Spinach Stuffed Chicken Breasts

These chicken breasts sound and look incredibly fancy, but they are a cinch to put together! Perfect for entertaining friends or family, and Krinos Goat’s Milk Feta adds so much flavour and punch to this stuffed chicken that you’ll want to make it over and over again! 

Krinos Feta and Spinach Stuffed Chicken with Roasted Potatoes

Ingredients (serves 4)


Stuffing mixture: Steam your spinach over simmering water until wilted. Crumble your feta into a mixing bowl, add your spinach and dates. Stir to combine. Add a pinch of salt and pepper and mix again.

Using a paring knife, butterfly your chicken breasts, turn your chicken breast onto it’s side and make a slit to open up the chicken breast, like a butterfly.

Spoon you stuffing mixture into your butterflied chicken breasts. Close your chicken breasts, if you want you can use toothpicks to keep them closed.

Place your chicken breasts on a parchment lined baking sheet and bake at 350ºF for 25-35 minutes or until the chicken is cooked through, there should be no pink.

Serve along with a big side salad and roasted veggies. Enjoy!
