Summer Orzo Salad with Krinos Goat Milk Feta Cheese

Summer Orzo Salad with Krinos Goat Milk Feta Cheese

This summer salad uses all of the vegetables that are bursting off the vines right now and are perfectly in season. I use Kamut Orzo, Kamut is an ancient grain that is much less processed and has a lot more nutrients than white orzo, I would recommend experimenting with Kamut Orzo, if you can find it!


  • 1 cup Grape Tomatoes, cut in half
  • 1 Cup Broccoli
  • ½ Cup Cucumber, chopped into bite size pieces
  • 1-2 Chicken Breasts, chopped into 1 inch cubes
  • 2 Cups Kamut Orzo, Cooked
  • ½ Cup Krinos Goat Milk Feta Cheese, crumbled
  • Salt and Pepper to taste


  • ¼ cup olive oil
  • ½ Lemon, juiced
  • 2 TBSP Apple Cider Vinegar
  • 1 TBSP Coconut Nectar or Maple Syrup
  • ½ TSP Cumin
  • Salt and Pepper to taste
