To the delight of foodie Explorers and Pioneers, Chef Freddie adds a collection of petisco {tapas} to his menu

 

Freddie Dias, head chef at the Houghton Hotel’s acclaimed Séjour restaurant, has being using the last few weeks of lockdown wisely. He added a new section to his menu at the modern-fine dining eatery.

Packed with flavour and adventure, a selection of petisco (Portuguese for tapas), grills and sauces are available under a new section on his menu, entitled Pioneer.

“I’m a naturally curious person, especially when it comes to food,” Freddie explains. “The expanded menu now has two different sections –Explorer which is our modern-fine dining menu, and Pioneer – a collection of tapas, or petisco, and grills which can be ordered as a combination of dishes, or as a side to our Explorer meals.”

The collection of elevated everyday dishes includes truffle-roasted cauliflower with sage beurre noisette, grilled broccolini with chilli and blue cheese sauce, “daaltjie” chickpea and spinach dumplings, and decadent triple-cooked hand cut chips with black garlic mayo and parmesan. There’s also a selection of premium local meat a 750g Chalmar t-bone, grass fed sirloin on the bone, a 600g pork chop and some of the finest Wagyu in the country.

Freddie has added two new dishes to the Explorer menu – line fish with courgette risotto, marinated courgette, goats cheese and gremolata; and a braised beef short rib with black garlic emulsion, charred leek, beef fat onions and pommes anna.

Chef Freddie, who has cooked in top kitchens the world over – including four years at the celebrated Cape Town eatery The Pot Luck Club, brings a wealth of experience and knowledge to the kitchen. Driven by his natural curiosity and eagerness to always learn more, the acclaimed chef draws influences from all aspects of his life whether it be his upbringing, travels abroad or his many years in service.

Since opening its doors in October 2020, Séjour restaurant has quickly established itself as the go-to Johannesburg modern fine dining restaurant without the fluff. It allows guests to both enjoy the space and it’s offering in utmost ease and comfort. It is located within the luxurious Houghton Hotel, situated in the upmarket suburb of Houghton Estate.

The name Séjour, is French for sojourn – defined as a temporary stay or visit. The idea being to create a space that could be an escape from the hustle and bustle of Joburg.
