The Bedfordview restaurant’s next pairing experience will bring together a new six-course menu by Executive Chef Kyle Marshall and a selection of Bruce Jack wines for one night only
There is a certain theatre to a wine-pairing dinner at The 11th Floor. It begins as the sun slips behind the Johannesburg skyline – the first pour, the arrival of a beautifully composed plate and the interplay of flavours and textures. Each course adds something new, turning dinner into a sensory experience designed to linger long after the final plate.

Recently nominated as South Africa’s Best Restaurant and Africa’s Best Rooftop Restaurant in the 2026 World Culinary Awards, The 11th Floor has become known for considered cuisine and a genuine sense of occasion. Its wine-pairing evenings bring this approach to life, giving Executive Chef Kyle Marshall and his team the freedom to create beyond the restaurant’s à la carte menu.

On Wednesday, 2 September, the restaurant will present its final wine-pairing evening of 2026. As winter takes its final bow, Chef Kyle’s exclusive six-course menu will bring together comforting seasonal flavours and a selection of award-winning South African wines – an invitation to settle in above the city, linger over every course and raise a glass before the warmer days of spring arrive.
This time, the kitchen will work with Bruce Jack Wines, a family-owned South African producer known for combining considered winemaking with an independent and often unconventional spirit. In 2026, Bruce Jack Wines was named one of Drinks International’s World’s Most Admired Wine Brands for the sixth time.
A menu created exclusively for the evening
Rather than choosing wines once the food has been decided, Chef Kyle and Head Sommelier Keize Mumba develop each pairing together. Following tastings at the wine farms, they consider each wine’s flavour, mouthfeel and depth, and how different ingredients and textures can bring these qualities to life on the plate.
“When we plan these evenings, we taste the wines first and allow them to guide the menu,” says Marshall. “Sometimes a wine takes a dish in a direction we did not expect, and that is what makes the process exciting for us. We want guests to experience that same sense of discovery as each course arrives.”

The evening will begin with a welcome pour of Bruce Jack “Ghost in the Machine” Sauvignon Blanc, a bright, saline opening to the producer’s range. This will be followed by the first course, Oyster, Gremolata & Pear-Citrus Salsa, which introduces the menu with clean, briny freshness.
Course two, Smoked Salmon, Charred Lemon & Whipped Feta, shifts the menu towards soft smoke, bright acidity and creamy textures. It will be paired with Marmalade Invader Skin-Contact Chenin Blanc.
The flavours deepen with course three, Roasted Lamb Rack, paired with Bruce Jack Reserve Pinotage. The rosemary-crusted lamb brings a richer, more comforting note to the evening before the menu changes pace.
Course four, Wine Sorbet & Forest Berry Foam, provides a cool, fruit-led pause. Paired with The Drift Estate Movable Feast, the course also uses the wine as an ingredient, drawing its mulberry, blackberry and fynbos-herb character into the sorbet.
The final savoury course is Deconstructed Beef Wellington. Paired with Bruce Jack “The Epic Journey”, the dish reinterprets the classic Wellington through slow-braised ossobuco, bringing depth and richness before dessert.
The sixth course, Lychee & Coral Cake, closes the evening with silky fruit, bright citrus and playful textures. It will be paired with Bruce Jack “Bumble Bee” Moscato.

Each plate will reflect The 11th Floor’s signature balance of detail, flavour and presentation, while giving the selected wines space to reveal something different with every course.
The aim is not simply to place a glass of wine beside a dish. It is to create moments where a sip changes the way a bite is experienced – and where the food, in turn, brings a new dimension to the wine.
Dinner above the city
The setting plays its own part. From its elevated position, the restaurant offers sweeping views across Bedfordview and beyond. As daylight fades and the city lights begin to appear, the dining room takes on the atmosphere that has become central to The 11th Floor experience.
