A Culinary Journey Born of Fire
Since its inception in 2016, Marble has become synonymous with South Africa’s diverse and bold food culture. Co-founders Chef David Higgs and entrepreneur Gary Kyriacou now bring this legacy to Cape Town, merging their signature fire-focused philosophy with the city’s renowned seafood traditions.
“The concept of live-fire cooking may not be new anymore, but the way we do it at Marble is always a fresh experience. That’s what excites us about Cape Town,” says Head Chef Matt van Niekerk. “Fire has a way of bringing people together – it’s where stories are shared, ideas come to life, and connections are made.”
At the heart of Marble Cape Town’s menu is an iconic Grillworks, delivering bold flavours through the interplay of fire and finesse. Signature starters include snoek pâté with magwenya, and lamb and beef tartare with pickled waterblommetjies. Mains feature Marble’s celebrated wood-fired Chalmar ribeye, alongside new creations like mussel paella and line fish with burnt leeks and roasted fish bone sauce.
“One of the things I love most is how vegetables transform over fire,” shares Higgs. “They develop a complexity and character you can’t achieve any other way.” Highlights include roasted pumpkin with candied walnuts and burnt honey dressing.
To end on a sweet note, desserts range from cheese, biscuits, and pickles curated by Karen Dudley to key lime pie and the whimsical Cape Town granadilla lolly – guaranteed to make you jolly.
The Marble bar offers a dynamic menu of innovative cocktails, alongside a curated wine list featuring premium local and international selections. Overseen by Group Wine Director Wikus Human and Head Sommelier Jan-Hendrik Venter, the wine list showcases the best of South Africa and beyond.
Elevated Design Inspired by Cape Town
Located in the historic Union Castle building, the 800m² space is a masterpiece designed and curated by Interior Director Irene Kyriacou and Redecco. The interiors reflect Cape Town’s natural elements—wind, sea, and earth—while floor-to-ceiling glass facades provide breathtaking 360° views. The design is complemented by bespoke art, sophisticated textures, and locally inspired elements.
The space evolves throughout the day,” explains Irene. “Whether it’s lunchtime, sundowners, or an evening experience, the design adapts to Cape Town’s moods—from stormy days to vibrant summer sunsets. The outdoor terrace is an extension of the dining and bar area, designed to amplify the beauty of our surroundings without overshadowing them.”
Art remains integral to the Marble brand, with the Cape Town location featuring custom pieces inspired by local landscapes and heritage. Works by GRID, Krisjan Rossouw and Michael Beckurts celebrate Cape Town’s unique beauty, while Mash.T’s crystal bead installation reflects the brand’s commitment to craftsmanship. Other standout design elements include a stainless-steel ceiling installation mimicking water reflections and hand-stitched upholstery by Casamento, blending tradition with modernity.
